First really nice day out…after winter

Good Evening!!!  What a fun filled day today was! (I don’t really have a recap of the last couple days because all I did was work, and who wants to hear about that)

Nate and I were so excited to go to church together this morning (sometimes it seems like we serve on opposite Sundays or we meet up half-way through service). It was a wonderful service under the series CROWDED. This was the final message in the series and boy it was a good one. Our church is all about bringing Christ into people’s lives and ultimately making heaven more crowded! I love that phrase, it makes me smile everytime time I hear and think about it! It  also hits our church as a double-whammy right now because we are getting more crowded which is wonderful, but of course with growth, comes growing pains. Today’s message was on if we are one with the church, we need to serve with the church. We need to share our stuff. We need to share the gifts God has given to us. We can’t just put money in the plate and expect to get everything we need from the church. We must participate, we must serve, we must share the gospel. I sat in my seat very thankful for the church that I love serving (and happy I volunteered yesterday to stay for the 11 am service, so I didn’t feel guilty about not serving after that message 😉 )

Which leads me into….the best form of birth control….working in “little rock” (Babies->4 year olds). Nate serves coffee and I serve in the little rock– Nate says if he would do little rock with me he would never want kids–I’m glad he didn’t serve with the kids today! Oh my gosh were the kiddos cranky today! I think of the 9 that were in my room, 5 were screaming bloody murder for mom and only wanted to be held! I was holding little Jemma and she was the last to settle down, so I was able to take her out of the room and rock with her…then she turned into quite the snuggler–so precious–but still exhausting! I love serving in little rock…although some days can be challenging it makes me happy knowing there are parents getting saved everyday, they are attending church and bringing their children to hear about God! It is such a wonderful ministry to teach kids at an early age to know and love Jesus and that they have a God the father that will love them forever!

When I got home, Nate had Telli already to go for a hike at the dog park! It was a beautiful day….and awesome to spend it with my family! It was pretty crowded so instead of letting her play in the pen area (there were some mean and aggressive dogs there) we took her to the off-leash hiking trails! She did so good staying with us and greeting other dogs and then continuing to follow us. She loved when we made the loop and came back to the creek! I forgot how much of a water-bug she is! Watching her jump in and out of the creek and up and down the hill was hilarious!

After a good hike, it was the perfect afternoon to grab a frozen yogurt at Menchies! Our favorite summer hangout (that sentence made me sound like a 12 year old!).

It was delicious…Nate enjoyed the cinnamon bun flavor with some toppings and I enjoyed the cake mix and cookies and cream yogurt with brownies, cookie dough chunks, chocolate covered sunflower seeds, and chocolate pebbles! Telli sat nicely next to the table as we enjoyed our frozen yogurt in the sun!

2013-04-28 14.42.11

It was too beautiful outside to be inside when we got home so we laid out in the sun for a little while and then I did some tilling in the flower pot areas. I can’t plant any flowers yet, because more snow is expected this week, but I thought it would be good for the soil to take out all the old roots and mix it around a little bit! (I don’t really know if thats the right thing to do, because I definitely don’t have a green-thumb, but it seemed like a good idea!)

And now for dinner…….It’s GRILLING season!

Nate made some delicious burgers with feta cheese and jalapeños inside and I cut up some veggies and sweet potatoes! Oh, and we bought my favorite Wisconsin beer- Lienenkugels Summer Shandy!

We marinated the veggies in olive oil, salt, pepper, lemon juice and balsamic vinegar! mmmmm, some of the best grilled veggies I’ve ever had! Too bad I did burn the sweet potato fries, but the non-burnt ones still tasted really good!

Telli was really jealous of our meal….I think she wanted some….

That’s when she was patient and good…..

….and then she became like her father….very impatient when she doesn’t get the food she wants!

Well that wraps up today before we head into the work week tomorrow!

What are your favorite things to-do on the “first really nice day” after winter?!?!

❤ God Bless

Sloppy. Slushy. Muddy. SUNNY!

Good afternoon and Happy Wednesday to everyone!

Nate was up at 4:00 this morning to catch an early flight to Albuquerque for the day!! I’m so glad that was not me…it was waaaaay to early to be awake! We were curious what Telli would do, as recently she has been waking us up early/middle of the night to go to the bathroom…Well she woke up to go to the bathroom with Nate and then went back to bed. I didn’t set an alarm assuming she was going to be my alarm clock! Well, I was wrong! I woke up at 8am!! And when I called her to come in to my room to say good morning, she didn’t even come….she waited for me to come out and snuggle with her on her bed..she’s so goofy!

I was really looking forward to going shopping today. It’s been awhile, but we set aside some money so I could go shopping! I had a $25 gift card to Macy’s and then I’m always a fan of TJ Maxx, Marshall’s and Ross. Well there are both just a 25 minute drive from us, so I off I went! I decided to take the scenic route instead of the interstate because it was beautiful today! Am I glad that I did! I got to see a small herd of deer, and a small herd of elk! There were a couple on the side of the road, and then this little guy that was trying to cross and when he saw the cars, he did the typical “deer in the headlights look” before moving to the side. (I couldn’t get my camera out in time to get the look!)

I just love that the road runs along the creek and through the bluffs and cliffs-it was beautiful!

I got to Macy’s and without knowing– they were having a HUGE SALE! And on top of the sale a worker gave me a friends and family discount that was an extra 25% off everything! Whoo-hoo!!! So much for only spending $25!…..but this also meant I was doing a lot of math! You should’ve seen me back in the dressing room, looking at price tags taking the sale discount (most 40% off) + the extra 25% off. I had saved two items that I wanted to check the price on and see my total before adding them into the pile, I chose one of them! Look at the cute clothes I got–for $75!!!!!

The only thing I got from TJ Maxx were the cute Ralph Lauren flip-flops for $10!

Upon arriving home, I wanted to take Telli to the dog park, but I was starving! I threw together a quick warm pasta with avocado, tomato, onion and pine nuts and some guacamole on the side to dip some pretzels in! It was a delicious lunch! (One of my friends on Facebook mentioned she was craving guacamole–so it made me crave it as well!)

Telli did great at the dog park-but then again there were no dogs…she kept looking at me like, “mom, who am I supposed to play with.”

QYD2fSvb7uO9lTf1JMFzTvC_zlfjQ3LzjuEY2pJ2E5A,WwG8QEy7ZCEfSeDB_IpoNdNJ69MRWPu7K4wKjo6jfeI NVIRA-NGemHCvEJaPv2rdf8682kYWc1gb0q-Kpv7llw b0WPtwIKoMdzvKbAgmU6smQJlLDKPa-zhAcI4yV4a2A

So I took her for a quick 1 mile hike that is on an off-leash trail! She stayed within 30 feet from me and was wonderful! Except she was a muddy, muddy mess! The trails were pretty wet from all the recent snow, but I know she still had a ton of fun! And I enjoyed being outside and getting a little muddy myself!

Well, it’s time to get ready for my small group bible study! I can’t wait to partake in a what I know will be a fabulous discussion! I hope you all have a great evening…

When you go shopping do you have a specific budget you have to stick to? or are reasonable? or shop till you drop?

Until next time…..

Sunday Funday!

Good evening all! I hope everyone had a wonderful weekend! I love Sundays, but they go by too fast! We were so excited to know that the mountains and ski resorts got “feet” of snow this past week! Technically, closing weekend was last weekend, but because so much snow came throughout the week, they re-opened 3 resorts for this weekend! We knew we were going!

Telli had us up again at the crack of dawn, so we were on the road just before 7. You may have seen my post before about The Bagelry here in Evergreen….well we made a stop before heading out of town! I got the power bagel (It has nuts and fruit in it!) with eggs, cheese and scallions! So delicious!

After getting pulled over (I forgot to put my license plate in the window of the car we were driving, oops! thankfully no ticket), we made it to Breckenridge. I love Breckenridge, but we don’t ski it very often because it gets SO crowded! We did a couple “groomer” runs which had a couple inches of fresh overnight snow, so it was beautiful! We then headed to the top and back bowl of Breckenridge. I was a little nervous, as I haven’t skied the back bowl before and with 4 feet of snow in the last week, I didn’t think my racer skis would do very well. It was challenging coming down, but so much fun and a great workout! At least I knew if I fell, it wouldn’t hurt–but I didn’t fall at all! 😉 After a couple more runs, it began to get crowded and we figured it would be a good time to leave! It was a beautiful, sunny, fresh powder ski day!

Gorgeous views, right?

The sun was so bright, I couldn’t stop squinting!!! So Nate said on the next one to keep my eyes closed, and on the count of three, open them!  Here is the wonderful picture of both of us trying not to squint!….go ahead…you can laugh!

When we got home this afternoon, we had made plans to meet up with a seller of a vehicle we are interested in. Its a 2005 Subaru outback turbo with a manual transmission! Nate experienced love at first sight and I think we’re going to buy it, as long as everything works out! Since Telli was in the house all morning we took her with so we could go for a walk while we were away from the house. She’s starting to get better on the leash–but I think she just has too darn good of a nose—she sniffs at everything!

Then she waited in the backseat of our car while we took the potential car for a test drive….

After a quick trip to the grocery store, we made dinner that was delicious! I bought coconut oil for the first time and we decided to make a simple dinner of pasta & chicken cooked in coconut oil! Highly recommend! Simple and Satisfying!

Time to relax before the work week! I hope you all enjoy your evening!

Have you ever cooked/used coconut oil before? What have you used it for?

Happy Birthday Telli!!!!

That’s right, yesterday was Telli’s 1st birthday! I can’t believe how much she has grown, how much she has learned, and how much she is still a little stinker! For instance last night she thought it would be fun to wake me up at 2:30, 5:30 and 6:30 to go to the bathroom….really Telli? It’s Saturday morning and you are one!

I still remember taking her home from the breeder’s last year, and she was so little. She stayed nice and close to me as I sat in the back seat. As soon as we left the farm she started to cry so hard and it made me want to was so sad taking her away from her family, but we knew she would get lots of love from us! She warmed up to us pretty quickly and started to give us kisses right away! She is a bundle of joy, a great hiking partner, a good couch snuggler and the social chair of the welcoming party at the dog park!

We wanted to make sure her birthday was extra special! Thursday night I looked up a recipe to make pupcakes! I think she knew they were for her, because she stayed by my side in the kitchen the entire time! I’m sure it didn’t help that I made them with a lot of peanut butter and carrots! (Those are her favorite!)

DSC00073 DSC00065

Look at her wait so patiently……and those eyes, they get me every time! I had to give her a little taste of the mixture before adding the egg….

Look at how cute the pupcake turned out! I was so happy I could find a recipe that was puppy approved! (by the way, the frosting is me approved!!!—It was so good, and I will be making it for myself in the future!) See the recipe at the bottom of the post.

We sang her happy birthday and tried to put on a party hat, but she took it off right away….After licking the frosting she got right into the cupcake and enjoyed it down to the very last crumb!

DSC00078 DSC00094

Happy birthday Telli girl! We love you and you bring a special ray of sunshine to our life!

Pupcake recipe:

Prep time: 10 minutes         Cook time: 15 minutes

Makes 5 regular cupcakes or 12 mini cupcakes

-1 egg

-2T peanut butter

-2T cooking oil

-1/2 teaspoon vanilla extract

-1T honey

-1/2 cup shredded carrots

-1/2 cup whole wheat or white flour

-1/2 teaspoon baking soda

1. Line cupcake pan with liners. Preheat oven to 350 degrees

2. In a medium bowl, combine egg, peanut butter, oil, vanilla, honey, and shredded carrots together. Add flour and baking soda to wet ingredients. Mix until just combined. Place a heaping tablespoon in each liner.

3. Bake for 12-14 minutes or until a toothpick comes out clean. Remove from pan and place on a wire rack. Be sure the pupcakes are cooled completely before frosting.

I mixed plain vanilla yogurt with peanut and added some honey. I eye-balled the portions, if I had to guess 1/2 cup of peanut butter to 1/4 cup of yogurt with 1 T of honey. I ate a lot of my initial batch because it tasted so good, so I had to make some more!

Since I prepared everything on Thursday and didn’t put it all together until Friday, I put the frosting in the refrigerator! I think this helped to solidify it more and make it look more like frosting!

I spread the frosting on the pupcake with my finger (any leftovers, I got to eat!) and topped with shredded carrots and a dog treat!

Let your pup enjoy!

Do you celebrate your pets birthday? My dad said we went overboard…but I sure enjoyed it!

Overnight Steel Cut Apple Cinnamon Overnight Oats

Good Morning and Happy Thursday! (So I know it’s Saturday, but I forgot to publish this post!)

I had the day off yesterday, which was wonderful, but I was SO busy and it was SO cold! Nate worked a half-day because we wanted to get out and test drive a couple vehicles that we saw online. Oh the joys of shopping for a VERY used car…at least I am familiar with the lingo and know what to expect, as well as have access to Carfax’s, etc..

When we got home, there was quite a few inches of snow already on the ground. Nate had snow-blowed our driveway the other day, but got a rock stuck in the blade, so he spent a little while outside drilling the rock into smaller pieces.

In the meantime, I took Telli for a nice walk. She loves the snow! I always put her on an extended cable leash so she has more room to run, jump and play in the snow. It’s so fun to watch her! She reminds me of me when I was little. I grew up in Wisconsin, so we always had a lot of snow. I remember whenever I walked home from school, I never walked on the sidewalks. I would climb to the top of the street snowbank, walk across it then slide down at the driveways. It was so fun! Telli does the exact same thing!

Enjoy the pictures of Telli playing in the snow!

For breakfast this morning I had made Overnight Steel Cut Apple Cinnamon Overnight Oats! Say that 5x fast. We woke up to the smell of apple cinnamon and they were delicious! I had never ate steel cut oats before, and they are so good! They have  a more nutty natural flavor than regular oats, but they take longer to prepare. So it was perfect to throw ’em in the crockpot so I didn’t have to wake up early! They were ready in the morning with fresh coffee!

Here is the recipe I used–and highly recommend

2 medium sized apples, peeled and chopped

1 C steel cut oats

3 T brown sugar

1/2 t cinnamon

1 T flax seed (optional but fabulous!)

1/4 t salt (as I type this recipe, I don’t think I added the salt…)

1 t vanilla

1 1/2 C milk

1 1/2 C water

Toppings: you can use bananas, almonds, walnuts, pecans, maple syrup, honey…..

I used banana, almonds and almond butter–and boy it was good!

1. Spray the inside of our crock pot with cooking spray (I don’t think I put enough spray, or maybe just the nature of the oats, made them stick pretty bad..). You will need a crock pot that is at least 3 1/2 quarts in size. 2. Place all ingredients (except the toppings) into the crock pot. Give it  a nice stir, and cook on low for 7 hours.

See you all soon on another update! 🙂

The Woodhouse Spa. Denver

I work for a great company. They like to take care of their communities and they’re employees. 🙂

Every year in November we do a campaign to support money for The United Way. The United Way is a great organization that helps under privileged kids and adults, not only nationally but also in the Denver metro. The other cool thing is that my company matches our donation dollar for dollar! That’s huge! It means my donation is doubled!!! I love that I am able to work for a company that gives so much back to it’s community. Not that I ever need an incentive to give to the United Way, but my company typically adds in little perks to give an incentive to increase your donation.

My perk for being a leadership giver this year, was to spend a day at the spa! It was glorious! My manager pre-paid everything, all I had to do was show up at 1:00 after 3 hours of work! I was more than ready to show up! I went with our marketing executive Lisa, so it was fun to have someone there to converse with and enjoy the experience with. The Woodhouse Spa is a quiet retreat located in the  busy Uptown neighborhood, in an old historic home. It has beautiful, old charm  that on a cold and snowy day, was perfect to get warm and cozy in, 🙂 Not to mention have a mimosa waiting for me upon arrival.

We went to the second level to get changed into our comfy and warm robes! Massage was first. AH-mazing! First off,I walked into the room and it was decorated so beautiful with great charm. It was a large room, which to me was nice, because every other massage I’ve ever had is in a little room with a table and massage bed. I know the picture below is dark, but you can see there is a claw foot soaker tub, a couple windows, and a beautiful little chandelier that was dimly lit! Erin did my massage and it was one of the best massages I have ever had! She actually asked me a couple minutes in how the pressure was! I don’t get massages a lot, but I have had about 5, so I know the routine. I don’t like when they have me turn over-because it means I’m already half way done, and when they massage my head and face, it means the massage time is almost over-and it always goes by too fast!

I would love to take a bubble bath in this tub!!

Next up was the facial! This was my first one, and I didn’t have any idea of what to expect, except that they were going to put stuff on my face! Julieen was my facial person (no idea what they’re called) and it was great because she told me everything she was doing as she did it. I couldn’t recall what Julieen did exactly except put a lot of different products on my face that felt good, and smelled delicious! She wrapped a hot towel around my face quite a few times and also had a steamer almost always on my face! Oh, and then when my skin was “exfoliated” and the pores were open–she picked out a couple blackheads. Kinda weird if you ask me, but oh well, I think I have the clearest skin I’ve ever had right now! I didn’t really get a good picture in here, but look outside–I’m glad I was cozied up inside in a robe!

Now for a bit of the funny part. I went to my locker to change out of my cozy robe.. 😦 and I forgot my locker code! They have the electronic lockers that you make up the 4 digit code to unlock it. And….I not only forgot the code, but I forgot which locker I put my stuff in. Luckily, there were only 2 locked lockers on the section I remembered using, but still…I tried every 4-digit pin I’ve ever used, on both lockers..and nothing! So I walked into the lobby in my robe to get assistance. Oops!

Then it was pedi time! I love pedi time! It’s such a great way to relax (not that I wasn’t already relaxed.) But I think since I wear heels almost everyday, pedicures are a great feet reliever! And they make your toes look cute! The room with the pedicures had a great window to look outside and see the snow fall!

Beautiful right? And check out this foot bath tub!-Isn’t it gorgeous?!?

At the end, I had one drink that I needed to pay for. I went to the cashier to take care of it and she told me, “that will be two-fifteen. do you want to add a tip on?” Well me, thinking the spa day was already paid for as well as the tip….eh, on a $2.15 drink (cheap drink!!) I don’t need to tip for the drink. When I looked at Lisa and said that is the cheapest drink ever, the lady looked at me and said no $215! I think she quickly realized I wasn’t prepared to pay $215 and looked through the notes to see it was already paid for. Whew! That cheap drink turned into an expensive drive which turned into everything taken care of!

I had so much fun and enjoyed myself at the Woodhouse Spa. It was a great retreat from work and good way to kick back and relax a little bit!

Until I had to walk outside to the car….in 3″ of snow… flip-flops. My feet were kinda cold! 🙂

Happy Monday!

❤ God Bless

A little snow….nbd

Just like that, the snow is back–in full force! As much as I would love for spring and summer to come in full force, snow in the mountains is just so beautiful and Colorado definitely needs the moisture in the ground. All weekend I knew exactly what I was going to blog about today, because I was SO looking forward to today, but with some turn of events I feel the need to mention other events-so I apologize for the all-over-the-place blog.

My heart, my thoughts and my prayers go out to all of those affected in Boston. What a sad and horrific tragedy to happen today. I just pray for all of those injured and killed in this horrific event. For such a dark cloud  to hover over one of the worlds most athletic events, instead of joy and happiness of achieving greatness.  For something like this to strike at an event that so many people  train so hard for, and celebrate in finishing….so sad…

As mentioned in previous posts we are working on our financial freedom using Dave Ramsey.  Therefore, after much prayer and thought we decided to sell Nate’s 4runner. It’s his baby. It’s his love (I think sometimes more than me… j/k….well kinda 😉 ) He is feeling at peace about selling it, knowing our finances are in God’s hands and he will continue to bless us. We currently have a guy that is going to buy it, all the financing is taken care of, so we just need to close….we will continue to pray that it will close!

2013-04-13 13.25.58

Also, since we will be selling our 4runner, we will also be purchasing a car. We are searching for an older model, higher mileage vehicle that is reliable! We have a couple meetings set and are looking forward to deciding which car will be best for us! Any recomendations or personal experiences out there with a 2001 Toyota Highlander, 2004 Honda Pilot, or 2000’s Subaru Forester? I would love to hear your opinion!

It was so snowy today! I was lucky to spend 4 hours at a spa! (see my next post all about the Woodhouse Spa in Denver). Nate picked me up from the spa so I didn’t have to drive home (he’s so sweet!). We were both pretty hungry and were craving some warm food. We have always driven past Da Kind Soups in Evergreen, but had never stopped. Tonight would be the perfect night—and boy it was!

First of all, I got a crazy look when I walked through the doors (flip-flops in a blizzard?!?!?–Yeah, I just got a pedicure!). There was a line of 10 soups, SO many flavors–the ones I remember…Chicken Noodle, Tomato, Chicken Chili, Beer Cheese, Potato Leek, Chili, Lentil something or other, and many others. I think Nate and I had samples of almost all the flavors! I decided on the Potato Leek soup with a bread bowl and Nate decided on the Chicken Chili. Both were delicious and inhaled upon arriving home! The first time will NOT be the last time!

I hope you all had a great Monday and let’s continue to pray for those affected by today’s tragedy.

❤ God Bless

Catching the wave….

Good morning!! It’s the weekend (well maybe for you, not for me- I have to go to work..boooo) I hope wherever you are you have stayed warm and safe this past week as storms whipped across the US. My parents house actually had a large branch (from my favorite birch tree) fall on the house. Thankfully, it didn’t do any damage except to the gutter (at least from what they can tell for now). But that storm was wicked! We just had below zero temperatures!

Nate left to go skiing early so it’s just Telli and I in the house. We’re enjoying Dave Barnes on Pandora (highly recommend the Pandora Station!), the sunrise out the window and a hot cup of coffee. I love mornings when I can relax and be prayerful and thankful over the past week. Oh, and a delicious breakfast of waffles with almond butter and blueberries!!

Catch the wave

Well Nate and I have had a lot on our mind  (my career, finances, future family, etc…) recently and have been diligent in our prayer trying to find the best guidance from our Lord. I love how many messages at church and songs on the radio play at the perfect time to bring me peace when I feel  anxious, excited and uncertain. Recently, our pastor spoke a message titled “Catch the wave.” He presented it a couple weeks ago, but I will typically replay messages during my commute to work, and my small group discusses the messages a couple weeks after the message was spoke–so we discussed it this week. Needless to say, I think it was a message that definitely spoke and continues to speak to me. I wanted to share bits and pieces of it while it applies to my life, but if you like what I say, I highly recommend you listen to my entire inspiration on this post— Eric Parks, you can see it here.

Have you ever boogie-boarded? Our family took vacations down to the Florida beaches quite a few times when I was a child, and I loved boogie boarding and body surfing! There is this thrill I remember…standing in the ocean looking for the perfect wave to come in so I could catch it! There is that split-second decision to go for it-to ride the wave. If I decided that it wasn’t the perfect wave, there were always more waves coming. Sometimes I took a wave and it twisted me and rolled me….and I crashed. While other times I caught the wave and rode it all the way in..past all the water and up on the beach with a big ol’ smile on my face! When I jumped in and caught the perfect wave- it was wonderful! The awesome thing is, once I decided to catch the wave-the power of the wave took me, I couldn’t control anything…sometimes it twisted me and turned me…and sometimes it just sent me right into shore–but all the work is in the power of the wave!

In 2 Corinthians 12:9 it says: My grace is all you need, my power works best in your weakness

Maybe what Jesus is talking about–is we all need to surrender to the power of the wave.  Catching a wave with a boogie board or body surfing is like living by grace-taking the leap and stepping into the flow of God and his plans for me! When I surrender myself to the power of the wave it takes me where God intends me to go and it is always a wonderful ride! But I definitely have my days, situations, periods of life where I prefer to say “no thanks” to the waves God sends me thinking I can do it on my own or doing it societies way is better-because “times” have changed. Do you ever do that? When I don’t jump into the wave, when I just stand in the middle of the ocean, it’s not as fun, I make more mistakes, I don’t feel as full of life….It’s not as fun as it is to dive into the wave and let it take you where it intends to lead you.

God is constantly sending waves towards me. My biggest fear is that I will not surrender to his waves or that I will not see his waves coming in my daily life.

My small group brought me comfort in knowing that this message was all about his grace. God is the wave maker, and the waves (grace) he sends are constant. First we need to see the wave coming (my doubtful self said: well what if I don’t see the wave coming and I miss the opportunity. They said: be thankful God will continue to send waves until I do see it, and if he can’t make it clear enough he will paint the wave orange so I can’t miss it-because when I surrender myself to our Lord he will put me on the right path).

If I don’t surrender to the wave, if I just stand there and don’t attempt to catch the wave I will never see transformation and I won’t even take a step on the great path that God has in my plan.

The cool thing is if I decide not to take a wave God has sent to me, or if he sent me the perfect wave and I took it, but made mistakes I don’t need to convince God to send another wave I just have to turn around and look for the next wave that’s coming my way. The waves are never ending, God keeps sending the waves and that is grace. And that is what brings me peace. The great thing is I may miss the wave today, not see it coming tomorrow, but God will put me where I need to be.

Jeremiah 29:11- For I know the plans I have for you,” declares the Lord, “plans to prosper you and not to harm you, plans to give you hope and a future.

When I look at my career, finances and future family I must remain hopeful and thankful. Hopeful for what lies ahead and thankful for the waves I may have missed but knowing God will send more for me to catch!

Thank you God for having such Amazing Grace on all of us. I pray that you give me the ability to see the waves you continue to send my way, I pray for strength and faith to surrender to the waves you send, and I pray for the courage to not give up when I know I make a mistake.

What I Ate Wednesday….

So being new to the blogging world, I have come across some blogs that I love–of course! One of the common themes that I see is a post What I eat Wednesday! I love it, and I want to try it. I don’ know why, but I think it is sometimes a great way to get creative ideas from others on dishes to eat..and other times it shows that some days are just boring eating days (like today)..which is ok! And therefore, I apologize in advance for when that happens!

So let’s get started…

After getting kicked in the butt by Ms. Jillian Michaels yesterday morning I made my favorite, easy and healthy breakfast! It is filling, satisfying and I love dunking english muffins into a runny yoke!

English Muffins + Eggs + Avocado + Blueberries + Bananas + a delicious cup a joe!

Mid-morning I started to crave something sweet–so I pulled out an orange with my handy-dandy orange peeler!

Lunch was pretty simple. A half of a ham with provolone cheese and spinach sandwich & Carrots & Cucumbers! Oh and notice my new water glass I was using! I love it!

Halfway through the afternoon I of course got hungry, so I had a Butternut Squash Harvest Muffin and Fage yogurt! I always look forward to my Fage yogurt snack! It’s sweet and I love mixing the fruit into the plain greek yogurt mixture. I can put as much in as I want to and it’s good fruit-unlike a lot of the fruit on the bottom yogurts! –Yuck!

I left work early because we met with our small group last night! I always look forward to the night, but from a food perspective it’s never good, because I’m hungry and I don’t eat dinner. I try to pack extra food in the morning, but it’s never enough…

I had an apple and granola bar on the drive to the house.

If you’ve never tried the Cascadian Farms granola bars, I highly recommend them! They are the perfect amount of chewy and these have blueberries!!! The harvest berry is obviously full of berries, and I love it–sweet and satisfying!

Nate had made a batch of healthy chocolate chip cookies, so of course he brought one for me to have as a snack! It was very good! (He even told me he took “blog-worthy” pictures for me to post!)

Don’t they look delicious? He is pretty wonderful!

Oh, and then the best eats of the day, that I forgot to take a picture of… At small group Jesse brought a Godiva Chocolate Cheesecake Factory Cheesecake! Oh my goodness, Oh my goodness–what an amazing indulgence! Clearly this is not my picture, it’s from the Cheesecake factory, but I thought I would make your mouth water this morning! 🙂

What do you think of my first edition of “What I Ate Wednesday?”

Recipe for the “2 ingredients” Healthy Chocolate Chip cookies

2. Mash the ingredients together, shape the mixture into balls and place on a cookie sheet covered in wax paper.

3. Push down onto the balls to form a disk.

Good morning!!!!! It’s SOOO cold outside! Nate said it was -2 out!

Recap of yesterday afternoon….

I can’t believe it was 2 degrees yesterday and today!! After cleaning and baking all day, I was pretty cooped up and wanted to get out of the house, but the roads were kind of bad so I didn’t want to travel down to Denver. So what do you do in Evergreen to get out of the house when it’s freezing out? Go to Starbucks, Home Depot and Wal-Mart.

mmmm…a Chai Tea Latte never tasted so good on such a blustery, cold Tuesday afternoon!

I saw a commercial a little while ago for Vaseline Spray&Go lotion–and ever since, I’ve wanted to try it! I have this weird thing that I hate putting on lotion, but then my skin turns dry and I kick myself not putting the stupid lotion on. So needless to say, when I saw this cool spray lotion, I had to try it! I’ll let you know how it works!

Of course when I go to Wal-mart, it’s like going to Target.. but not as bad…I can’t buy just one thing. Here are my fun purchases of the day! The spray lotion, a plastic mason jar water bottle kind-of thing…super cute, and “I lilac you” nail polish! It’s the little things in life that sometimes bring a smile to my face–especially on a cold day!:) New things!

Isn’t the nail polish a pretty color? And a fun name! Perfect for spring!

For dinner we made delicious Spaghetti Squash again! I guess the squash was on sale at the store–we have made a lot with squash lately, but it’s so good and it’s so good for you and it’s so easy to make! Much better than using pasta for Spaghetti!

And then it was time to catch up on recorded guilty pleasure Kim & Kourtney take on Miami and the remainder of the ACM’s that we fell asleep to the other night. Telli must have been cold after coming in from outside because all she wanted was to snuggle with her daddy….and when I say snuggle, I mean sit on his lap! 🙂 Love her….and him!

And now for the workout this morning…..

I did a circuit workout off of Jillian Michaels 30-day shred video! I like to mix it up between workouts I make for myself, and someone telling me what to do. Jillian is able to motivate me through the TV, I couldn’t even imagine having her in my face during a workout! I love this 30 minute shred, it’s a great circuit workout. I did 3 sets of — 3 minutes strength, 2 minutes cardio, 1 minute abs. And Jillian doesn’t let you break–which I love!

Well hope you all have a great day, and if your in line of this cold and crazy weather-stay safe and warm!

Next up–WIAW (What I ate Wednesday)

Finish the sentence: It is freezing outside, so I am going to……..
